A favorite Greek Spice Roasted Cauliflower recipe
This recipe is low carb, full of tangy flavor and pairs perfectly with almost any meat main course.
Greek Spice Roasted Cauliflower
INGREDIENTS
- 1 large head fresh cauliflower, cut into bite size pieces
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
SAUCE
- 1/4 cup plain Greek yogurt
- 2 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 – 2 tablespoons MySpicer Greek Seasoning
- 1/3 cup feta cheese, crumbled
- 1/4 cup fresh mint, chopped
INSTRUCTIONS
Preheat oven to 425 degrees.
Toss bite size cauliflower with olive oil, garlic powder, salt and black pepper in a large bowl. Place the seasoned bites on a preheated baking sheet. Bake for 30 minutes until cauliflower is tender, and starts to char on the edges.
Remove the cauliflower bites from oven and cool for 5 minutes.
In a separate bowl mix the Greek yogurt, mayonnaise, lemon juice and MySpicer Greek Seasoning. Once mixed, add the cauliflower and still until fully coated.
Drizzle with additional sauce on top and sprinkle the crumbled feta and mint.
